Ingredients
¼cupbutter softened
¼cup coconut oil
¼cupcornstarch
¼tspsalt
½tspbaking soda
1cup all-purpose flour
1egg
1tbsplemon zest
2tbsp lemon juice
2tbsppoppy seeds
⅔cupwhite sugar
Instructions
Mix the butter, coconut oil and sugar in a container until fluffy and pale.
Put in the egg, lemon zest and lemon juice and mix thoroughly.
Fold in the remaining ingredients and mix using a spatula.
Drop spoonfuls of batter on baking trays coated with baking paper.
Preheat your oven and bake the cookies at 350F for about fifteen minutes or until a golden-brown colour is achieved or until a golden-brown colour is achieved on the edges.
