Ingredients

  • ¼ cup butter softened
  • ¼ cup  coconut oil
  • ¼ cup cornstarch
  • ¼ tsp salt
  • ½ tsp baking soda
  • 1 cup  all-purpose flour
  • 1 egg
  • 1 tbsp lemon zest
  • 2 tbsp  lemon juice
  • 2 tbsp poppy seeds
  • cup white sugar

Instructions

  • Mix the butter, coconut oil and sugar in a container until fluffy and pale.
  • Put in the egg, lemon zest and lemon juice and mix thoroughly.
  • Fold in the remaining ingredients and mix using a spatula.
  • Drop spoonfuls of batter on baking trays coated with baking paper.
  • Preheat your oven and bake the cookies at 350F for about fifteen minutes or until a golden-brown colour is achieved or until a golden-brown colour is achieved on the edges.
  • For the best taste experience, be sure to chill these cookies!
